Here now, an up-to-the-minute rundown of new restaurants that sprung to life over the past few days.

1) Polk Gulch: Over the weekend, the team behind dearly departed Koko Cocktails came back to the land of the living with Hi-Lo Club. The interior has been totally gutted and revamped with a reclaimed wood bar, hardwood floors and tin ceiling tiles. Many other details were shared earlier, and you can flip back through the construction process on Facebook. Do note, the bar is still in soft-open mode. [SFist]
2) Outer Sunset: 50-year-old Mexican restaurant Celia's is currently coming out of hibernation as Celia's by the Beach. According to a tipster, the ambiance is now "a little different" with a new scallop shaped fountain, turquoise paint and more of an open kitchen. Although the guacamole is reportedly, "AWESOME," server training issues, and an unbalanced margarita show the joint is still in hardcore soft-opening mode, so probably best to wait a bit longer before dropping in. 3) Tiburon: Tiburon Grill replacement Tiburon Tavern opens today, bringing another farm-to-table restaurant with Edison bulbs and a "gastropub vibe" into the world. Jamie Prouten is the chef in the kitchen, knocking out a menu of shared items like a grilled Fiscalini cheddar cheese on Panorama sourdough, larger plates like a "Tavern Burger" and desserts like funnel cake. There are also 12 craft beers on tap, and three WineStations in the house as well for your drinking pleasure. [EaterWire, ISSF]
