Chef news dispatch from Navio, the restaurant at The Ritz-Carlton, Half Moon Bay: exec. chef Xavier Salomon has apointed former Kokkari chef Sean Eastwood as the new chef de cuisine. There are already many new menu items, including slow braised octopus with saffron lemon cream, and a pan-roasted Sonoma quail. According to insider sources, the overall shtick will now move towards more rustic Mediterranean-inflected plates with fewer garnishes and bolder flavors. [EaterWire]
