Anonymous Chron food critic Michael Bauer has put on his trend-spotting cap to confirm everyone's suspicions: quail is the new duck. So cool is quail, in fact, that there is even an "emerging trend within a trend" of fried quail, which Bauer tried first at (trend-setter?) State Bird Provisions, followed by Campo Fina, Dixie, Foreign Cinema and 25 Lusk. An anti-Chick-Fil-A quail sandwich is probably next. [Chron]
