San Francisco has Mariposa Baking Co. and next month, Marin County is about to get its very first 100% certified gluten-free bakery and cafe as well. CIA trained pastry chef, Heather Hardcastle, who's been baking (and eating) entirely gluten free for the past 12 years, will bring her Flour Craft Bakery to brick-and-mortar land in downtown San Anselmo. Gluten-free eaters may recognize her label, which has become a regular thing on the shelves of Whole Foods, Rainbow, Real Foods and other natural markets all over the Bay Area. The future 1200-square-foot "intimate" spot will be outfitted with an open kitchen, a small window-lined seating area and a design Hardcastle describes as "classic, warm, and inviting."

Everything will be made on-site: pastries, fresh breads, brioche, muffins, scones, coffee cake, fruit galettes, gougeres, cookies, brownies, cupcakes, pies and more—all of it 100% gluten-free. There will be single origin coffee (brand TBA), and loose leaf tea too. Demand for gluten-free desserts keeps rising and rising, and with little nearby competition, Flour Craft Bakery is set to develop quite the following, maybe even as a destination bakery for gluten-free types. It should be opening in mid to late October.
