Dave Cruz, chef de cuisine at Thomas Keller's Yountville masterpiece Ad Hoc will leave on Feb. 1 to pursue his own culinary concept, which will be "casual yet detail-oriented, with his take on family-style service" in Napa or the Bay Area. Cruz initially opened Ad Hoc seven years ago with Keller. Katie Hagan-Whelchel, currently executive sous chef at the restaurant, will take his place. [Inside Scoop]
