Waterbar executive chef Parke Ulrich has stepped up to replace Epic Roasthouse opening chef Jan Birnbaum, who departed over the summer. Ulrich, who'll continue to oversee Waterbar's kitchen, plans to take the steakhouse in, well, more of a steakhouse direction, with prime cuts and a broader selection of sauces like béarnaise, Madeira, chimichurri and horseradish crème fraîche, as well as add-ons like lobster, Dungeness crab and truffle miso.
