Seattle chainlet Blue C Sushi, which recently completed its first California expansion with a location in Hollywood, is now headed to San Francisco. The seven-location spot, with a menu from Jeffrey Lunak, former corporate chef to Iron Chef Masaharu Morimoto, will take over about a third of the 100,000-square-foot former Chevy's space, making room for an 80-seat sushi bar with conveyor belts. Items arrive on colored plates designed to mirror Tokyo subway lines, with RFID tagging to ensure freshness. Aside from the belt, patrons can order a la carte sashimi, oysters, or hot small plates like agedashi tofu, sesame noodles, and spicy tuna tacos, with cupcakes and ice cream mochi for dessert.
The Stonestown location is part of a larger California push for Blue C, which also plans to open locations in Newport Beach and Tarzana within the next year. The design of the location should mirror that of the Hollywood branch, which features lots of colorful light fixtures and a wall of video screens.
