In further Saison growing pains news, Joshua Skenes is now stepping back on that whole "$48 salon tasting menu" thing he announced last week. The new salon menu is designed "to eliminate restrictions surrounding price, time and menu items, compared to the more rigid tasting menu in the restaurant," according to Inside Scoop, and will be somewhat improvisational: "A guest comes in, we start a conversation and we write a menu spontaneously," Skenes says. Said spontaneous menu will now cost a minimum of $88, and potentially more depending on the items ordered. The standard tasting menu in the dining room remains at $248 for 18-20 courses.
In other Saison salon news, the full liquor license still hasn't come through for cocktails, but beer, wine, and lower-proof drinks are all available.
