Less than a year into its tenure on Valencia, West of Pecos has seen a bartending addition (Blackbird alum Brent Butler), a renovation (adding reclaimed wood to the exterior of the building), and now, a chef and menu change. According to Inside Scoop, August Schuchman, who worked at Pecos' sister Woodhouse Fish Company restaurants, has replaced former chef Leo Varos, and the food program has been significantly revised, though the Southwestern focus remains.
