After five years as day-to-day chef under chef-partner Bruce Hill, Erik Lowe has amicably parted with Bix. His successor is Edward Higgins (right), who's worked for Lydia Shire, Tom Colicchio, and Marco Canora, in addition to doing several stints in Japan. While partner Doug Biederbeck says the restaurant's focus will remain American food, some elements of Higgins' Italian and Japanese training may leak into the menu.
