Now that he's firmly ensconced at Parallel 37 in the Ritz-Carlton, Michael Rotondo is luring in some help from his former home, the now-shuttered Charlie Trotter's in Chicago. Sous chef Mitchell Nordby and pastry chef Andrea Correa have both made the trip from the Windy City, and Correa (a Colombian Noma and El Bulli alum who most recently opened Chicago's Yusho) will launch her new menu in mid-April.
