There's a shakeup in the Charlie Palmer empire today: Ashley Weaver is out at the Burritt Room & Tavern, to be replaced by Lucas Knox. Knox has logged time as executive sous chef at Palmer's Aureole location in Vegas, as well as at Bouchon Bistro there; he's a Nebraska native who studied at Le Cordon Bleu in Portland. Knox is planning on some major menu revisions, including making the menu more local, seasonal, ingredient-driven, etc. No word on where Weaver's headed. [EaterWire]
