Manny Torres Gimenez is no stranger to playing hermit-crab with restaurants, having launched a lauded tasting menu inside Mr. Pollo before moving down the street to Roxy's Cafe earlier this year (and scoring a Bauer review in the process). Now he's set his sights on another spot just down Mission Street: the long-shuttered Palace Family Steak House. Gimenez and his wife/GM Katarina plan to turn the space into a steakhouse called The Palace, focusing on whole-animal butchery while retaining the original space's reasonable price point. He'll cure his own meat, make sausages, and offer both an a la carte menu and a $50 five-course tasting menu.
Gimenez is currently plotting some minor renovations to the space, but it should remain largely unchanged, as he's planning to open up in less than a month, on June 1. He'll also continue to run the kitchen at Roxy's, but chef de cuisine Shawn Naputi, an Incanto alum, has been brought in to help out.
