Amidst all the gigantic openings this week, we don't want to leave out a cool pop-up that's going brick-and-mortar: Suite Foods, which makes Liège-style Belgian waffles, is taking the vacancy left in the 331 Cortland Marketplace by Bernal Cutlery (which, in turn, has just opened in the former Pot + Pantry space on Guerrero). Owner Sivan Wilensky does his waffles the traditional way, with a yeast-fermented dough (not a batter) studded with pearl sugar that oozes out and caramelizes the waffle as it cooks. His flavors, however, are untraditional: options will include matcha, brownie, and espresso, and toppings will range from maple bacon to ice cream to poached eggs with smoked sea salt. The shop will also offer European-style hot chocolate and coffee.

Suite Foods' shop opens tomorrow at 8 am, and will be open every day except Thursday from 8 am-6 pm. Their waffles also continue to be sold in packaged versions at all San Francisco Whole Foods locations, as well as a smattering in the wider Bay Area (Palo Alto, Davis, Santa Rosa, and Blossom Hill).
