Quince and Cotogna have scored two pastry chefs for the price of one: husband-and-wife team Carolyn Nugent and Alen Ramos, who ran the pastry program at the L.A. outposts of Thomas Keller's Bouchon and Bouchon Bakery. They've also worked for everyone from Pierre Hermé to Ferran Adria to Joël Robuchon, so they're no slouches.
