"We figured that if we bought a restaurant that was already a restaurant, it would be easy," Dana Sacco, the owner of Stuffed, said this week. In San Francisco's insane regulatory climate, though, that means very little: thanks to the wait for a beer and wine license, it took Sacco and partner Andy Schoengrund eight months longer than they anticipated to open their new pierogi spot, questions about which have been a mainstay of the Eater SF mailbag. Happily, we're here to tell you that Stuffed has arrived, and will be opening its 50-seat space in the former Mission Sub (which also has a few outdoor tables) to the public tomorrow.
Sacco, who made her name selling pierogi covertly to the local bar crowd, is heading up the kitchen, offering five takes on the Polish classic that range from traditional (farmer's cheese, sauteed onions, sour cream) to innovative (smoked salmon with cream cheese mashed potatoes). Here's the menu. She'll also offer a few sides, like asparagus, cole slaw, kraut, and Brussels sprouts, and may add extra dishes, like stuffed cabbage, later on. On the beer side, the all-bottle program will kick off with basics like Anchor Steam; Sacco and Schoengrund are currently in talks to bring in Midwestern and Rust Belt brews like Yuengling and Great Lakes, many of which currently aren't available in the Bay Area. The plan is to open at 5 pm on Saturday for a test run, then close up shop until Tuesday, when they'll have regular hours of 12-10 pm Tuesday-Thursday, 12 pm-12 am Friday-Saturday, and 10 am-2:30 pm Sunday (closed Mondays).
