Now that Tokyo Go Go has met its end, an entirely new kind of business is headed to the space: ABV, a cocktail bar from the power trio of Ryan Fitzgerald (who put Beretta on the map and is currently a brand ambassador for Del Maguey mezcal), Erik Reichborn-Kjennerud (who owns Dalva and the Hideout), and Todd Smith (a founding bartender of Bourbon & Branch who now tends bar at the Hideout). As Alcademics reports, the new bar will offer 10-15 cocktails with paired small plates. Though a chef hasn't been hired yet (they're looking to bring in a consultant), the plan is to offer classy finger foods like pickles and fried items, and serve until 1 am nightly.
On the drinks side, the trio tells Alcademics that they won't be engaging in barrel-aging, carbonation, draft cocktails, or any other trendy stuff. Drinks will alternate regularly, with input from all of the bartenders. Though it won't be a gut remodel, they're looking to do some fairly serious work on the space, shrinking the kitchen and expanding the bar so they can offer both bar seating and tables in the back. Eventually, they hope to offer educational tastings, cocktail classes, and brunch; the price point is intended to be affordable, with drinks and bites averaging around $10 apiece. No timeline yet on this one, but it likely won't be until next year.
