The crew at Eater National talked to six top-notch chefs, bartenders, and managers about the question of tipping, including SF's own Stuart Brioza and Nicole Krasinski of State Bird Provisions. "The systems and the laws are not current. They need to be updated," says Krasinski, and Brioza agrees: "I can't tell you how many hours we've spent on this subject.
