As Schroeder's goes into hibernation to prepare for its revamp from the owners of Press Club, it's chosen a chef to lead its transition into serving upscale German cuisine. Manfred Wrembel, who was briefly the chef of Plum and spent six years at Incanto, will lead the kitchen. With German heritage on both sides, he says he plans to infuse a California sensibility with traditional flavors like rye, caraway, and dill, as well as offer more casual sausages and pickles in the front beer hall.
