Hoss Zaré is making some big changes to Zaré at Fly Trap: as of this week, it's changing names back to just The Fly Trap, and Zaré, an Iranian immigrant who rose from line cook to owner of the restaurant, has brought on bar manager Valen West as a partner. There's also a new menu, which still has some Persian flavors but has incorporated Latin and American influences as well.
