Five weeks into its run, The Square is amping up its cocktail quotient by bringing on a new bar manager: Claire Sprouse, who honed her skills behind the stick at Future Bars properties Rickhouse and Tradition. She's offering twists on classics like a clarified White Russian, an "appletini" that's a far cry from the maligned original (it's made with Calvados), and a "tequila sunrise" that incorporates mezcal and creme de cassis.
