There are two new faces behind the scenes at Roku: Masaru and Yasu, brothers hailing from Miyazaki, the same small Japanese prefecture as owner Jay Hamada. With Masaru as head chef, the trio have infused the menu with more Miyazaki-style dishes like fried chicken nanban with Japanese-style tartar sauce and grilled beef tongue. Hamada is also serving the curry from his original JapaCurry food truck each night, so fans can once again get their fix. [Hoodline]
