Powerhouse little bistro Nico, which has been booming since a killer Bauer review, has added a key new player to its team: Maz Naba, the former Coi and Rich Table wine director, is now director of operations. He's revamping the restaurant's list to emphasize Old World wines from small producers, and in June, will launch a rosé program (15-20 bottles, 5 or so glass options) that will include an all-rosé tasting menu option. He's also adding some sakes and loophole cocktails to the mix, and the nightly Champagne magnum pours will remain. [EaterWire]
