A shuffle is going down in the kitchen of Izakaya Yuzuki this weekend, as opening chef Takashi Saito leaves the restaurant this Saturday after three years. His replacement will be Kentaro Ikuta, a veteran of Japanese kaiseki restaurants. Owner Yuko Hayashi says she'll continue to focus on koji and tofu, and depending on demand, might offer a more involved kaiseki menu from Ikuta down the line. [Inside Scoop]
