Peruvian Independence Day; Danny Bowien's Caesar

EMBARCADERO—Didn't you know? Today is Peruvian Independence day, and La Mar Cebicheria Peruana is celebrating with a special arroz con pato a la norteña (crispy Peking duck confit over cilantro and black beer rice), served with huancaina sauce and salsa criolla. THE INTERNETMission Chinese Food's Danny Bowien continues to be a fixture of the New York food scene, this time with a recipe appearing in The Times' Sunday Magazine. Described as an "ode to umami," Bowien's version uses the Caesar salad as a jumping-off point to concoct a Japanese-inspired cabbage salad, complete with beets, seaweed and anchovies. [NYTimes}
