Usually, middle-schoolers get in serious trouble for bringing knives to class, but a new program promises to teach them how to become butchers. Bay Leaf Kitchen is offering a "Meet Your Meat" class for sixth through eighth graders this fall, with 4505 Meats teaching sausage-making, Dave the Butcher showing the ropes of whole-animal butchery, and an overnight on a cattle farm with Hog & Rocks chef Robin Song.
