After making a splash with a sellout guest-chef meal from State Bird Provisions' Stuart Brioza, food-delivery app Sprig is continuing to lure top talent for one-night menu appearances. The latest chefs to saddle up: Ryan Pollnow, of Central Kitchen, and Tim Archuleta, of Ichi Sushi + Ni Bar. Pollnow will make his Sprig debut tomorrow evening, while Archuleta will offer his dishes two weeks from tomorrow, on Thursday, October 9. As always, dishes are $10 plus delivery (a portion of the proceeds from Pollnow's menu will benefit the SF Food Bank), and there's a red meat, non-red meat, and vegetarian option. Here's Pollnow's menu:
- Roasted Chicken, Chanterelles & Broken Rice Porridge: Five-spice roasted free-range chicken thighs with cilantro and sesame seeds, accompanied by organic butternut squash and chanterelles, over a scallion broken rice porridge with a ginger gastrique.
- Moroccan Spiced Meatballs: Meatballs with organic tomato sauce, braised chickpeas and sultanas, preserved eggplant, and mint yogurt sauce
- Mixed Grains and Seeds with Summer Squash: A quinoa, amaranth and wild rice risotto with pecorino, roasted and pickled summer squash, toasted seeds, and basil pesto.
