This week marks the start of Delfina's new chef, Edward Higgins, who will replace Brian Gremillion, chef de cuisine for the past four years. Most recently of Bix, Higgins comes from a solid background that includes NYC's Craft, Heart, and Insieme; Palo Alto's Quattro; and Ekki at the Four Seasons Hotel in Marunouchi, Japan. Gremillion, who earned a glowing Bauer review last year, has yet to announce his next move. [Tablehopper]
Also effective this week, Duncan Holmes has joined Marla Bakery as chef de cuisine. He'll oversee the menus for breakfast, lunch and dinner, alongside proprietors Amy Brown and Joe Wolf. Holmes most recently served as the chef de cuisine at Michelin-starred Sons & Daughters, and has a solid pedigree from several Bay Area kitchens, including La Toque, Auberge du Soleil and Saison. Meanwhile, a Craigslist ad has gone up for the job of executive chef at Bartlett Hall, indicating that opening chef Emmanuel Eng (Maverick) is on his way out. Eng will depart Bartlett Hall at the end of January, after only eight months in business; no word yet on Eng's plans for the future, or whether he will return to his previous position at Maverick. It should be noted that it's been just a little over a year since the fire that shut down the Mission spot— almost exactly the time estimated for a rebuild. [Inside Scoop]
