Taking over the old Ala Romana space is The Fine Mousse, a neighborhood wine bar mostly dedicated to bubbly and fries. Owner Jake Hajer (Woodhouse Fish Co.) developed a casual concept that gets at sparkling wine in a more approachable way. “We’re more on the playful spectrum,” he told Eater. “That’s one of the reasons why french fries are a good thing as opposed to caviar.” The menu will have a few types of fries made in different oils, like duck fat, with flavored mayos served alongside, plus some small plates, all meant to pair with bubbly, like housemade sourdough bread with cheese and fruit, sauteed squid, salad and cookies. Glasses of champagne and sparkling wine (including some still) will stay on the lower range of around $8 to $11, which Hajer hopes will keep the vibe less celebration and more every day. “We want to be your neighborhood hangout,” he said.

The Fine Mousse is on track to open Friday, October 2 at 6 p.m., though Hajer said that’s as long as everything goes according to plan, so call before you go.
