Mario Batali hasn’t historically shown San Francisco much love, instead focusing on his NYC, LA, Las Vegas and Singapore empires. But the Bay Area’s about to get a molto dose: Batali has teamed up with Belcampo Meat Co. to release a line of organic salumi. The three flavors — spicy pepperoni, traditional salami and cotechino — are made using free-range, non-GMO fed heritage pork from Belcampo Farms and then butchered in Shasta Valley, making the salumi a thoroughly California-bred product.

Batali and Belcampo CEO Anya Fernald have known each other for years, but this is Batali's first collaboration with the brand. The pepperoni and salami are in stores now, with the cotechino arriving on Thursday.
