Restaurateurs Mark and Terri Stark are set to open their sixth restaurant, Bird & The Bottle, in Santa Rosa at the end of this month. Inside Scoop reports that the theme is “a modern tavern celebrating the melting pot that is American cuisine.”

Chef de cusine Eric Foster (Willi's Seafood & Raw Bar) has created a menu with "uncommon combinations like grilled and chilled shellfish accompanied by Southern Saltines and Korean chile butter." Diners can also expect dishes like kimchee latkes with sour cream and garlic chive and plenty of meat and fish cooked on the Grillworks wood-burning grill, including the signature double cheeseburger. About the menu, Mark Stark tells Inside Scoop, "I designed it around all the things that I love to eat and cook, and on dishes from childhood and time spent living in Chesapeake Bay."

The restaurant, which seats 116 guests, is located in and old home (formerly the Italian Affair) and is split into three dining rooms and two decks. Cocktails will be served in oversized shakers (to share, if that's your thing) and craft beer will come by the both the grass and the growler.

We'll keep you posted with details as we get them.
