Burlingame just got a serious new dining addition in the form of Nachoria, a restaurant dedicated to "the art of the triangle," AKA the nacho. The counter-service restaurant also has tacos and quesadillas, but with a name like Nachoria, it’s hard to focus on anything else. The menu, a la Chipotle, lets you choose your vessel (nachos, tacos, quesadillas) and then add the meat of your choice (pollo asada, carne asada, carnitas, al pastor, shrimp, fried fish, ceviche, vegetarian). Unlike the typical American-style nachos loaded with refried beans, sour cream, guacamole, pico de gallo and jalapenos, Nachoria’s nachos are simpler with just housemade cheese sauce, fire-roasted red peppers, caramelized onions, scallions and queso fresco.

The restaurant has a full bar with beer, micheladas, margaritas, palomas, wine and more, plus outdoor seating. It’s open everyday from 11 a.m. to 10 p.m.
