Michelin-Starred Sushi Chef Brings an Omakase Sanctuary to the Mission

Masa Sasaki returns to the sushi counter in November

After earning a Michelin star at Maruya, chef Masa Sasaki left in pursuit of his own sushi restaurant, consulting at other sushi spots like Omakase and Delage along the way. Now it’s finally happening, as he prepares to open Sasaki on November 11, a 12-seat restaurant in what was previously the American Grilled Cheese Kitchen.

Along with partner Takanori Wada (Hamano), Sasaki is planning a prix fixe sushi menu that will hover around the $200 per person mark, depending on what fish is fresh and available. While technically an omakase menu, Sasaki says he wants to focus purely on edomae sushi.

That means the menu will include four to five appetizers followed by about 14 pieces of nigiri sushi, dessert, and tea. Sasaki emphasizes that simplicity is his goal, focusing on traditional sushi, and using intricate methods of smoking, curing, and marinating. “Every fish will have some kind of work,” said Sasaki. Additionally, diners won’t find fried food, kobe beef, or any other meat on the menu, as Sasaki plans to focus solely on fish and vegetables.

The traditional vibe will continue through to service, Sasaki told Eater. “I really want to give an experience that is equal to Japan.” That means a reserved relationship between chef and diner, which Sasaki says allows the sushi to speak for itself.

The space will be minimal, including a sleek counter, inset lighting, and woodwork from Joinery Structures. Plateware was made specially for Sasaki by Jin Yamanaka, who has also created delicate serving vessels for Saison, Manresa, and Benu.

Sasaki will offer two seatings, Tuesday through Saturday at 5:45 p.m. and 8:30 p.m. Reservations can be made by calling the restaurant.
