There’s no shortage of salads in Berkeley, but there’s also still room for more. Enter, Sweetgreen: the Washington, D.C.-based fast-casual salad company with more than 30 locations across the East Coast and three in LA, plus high-profile investors like Daniel Boulud and Danny Meyer, that's opening this Tuesday, April 19 in the old Oscar's space in Berkeley. The ethos of the company is based on local, seasonal, organic ingredients that are prepared from scratch and transparently-sourced. To that end, the opening menu (in full below) includes ingredients from many of the area’s top purveyors, like Hodosoy tofu, Full Belly beets and asparagus and Mary’s chicken (full list of purveyors also below).

Co-founder Nicolas Jammet told Eater that he and his team very intentionally chose Berkeley as their first NorCal location. "We learned that the Bay Area, specifically Berkeley is a community very serious and well-versed on food and understands food in a very deep way," he said. "In Berkeley especially you have access to this type of food in the grocery stores and restaurants, but it can still be hard to find it in a way that's quick and convenient and accessible, and we’re excited to be that."

The opening menu for spring features the company’s standard menu, plus three salads that will rotate with the changing seasons ("We really start with the list of ingredients and suppliers and the menu comes from that," Jammet said). Salads range from $7 to $13, which Jammet said was so that people could eat a full healthy meal at a reasonable price. Sweetgreen opens to the public on Tuesday, April 19, with 100 percent of proceeds benefiting the Berkeley Technology Academy. Business as usual then begins on Wednesday, April 20.
