Trappist Provisions, the petite European beer-focused bottle shop and tap room from beer expert Chuck Stilphen, will transform into a Mikkeller Tasting Room & Bottle Shop. It’s already underway, with a complete conversion due in August, says Inside Scoop.

The changes to the taproom sound pretty minimal, according to Stilphen, who says it will just become "more Mikkeller-looking" and probably won’t even close. There will be 12 taps, filled with beer from Europe, California and Mikkeller’s San Diego brewery. Bottles will continue to be sold, though the Belgian/European influence will shift towards Mikkeller for the most part. Food, which currently includes cheese, as well as rillettes from Homestead, won’t change much.
Stilphen, also proprietor of The Trappist in Old Oakland and Øl Beercafe & Bottle Shop in Walnut Creek, helped launch Mikkeller's San Francisco location in 2013. It's a logical move, given that the newly-opened Mikkeller brewery in San Diego will be able to provide fresh beer.
