Fast casual fried chicken sandwiches are headed SoMa’s way, courtesy of empire builder Adriano Paganini (Back of the House). Called The Bird, this will be a Paganini’s third fast casual venture (behind Super Duper and Uno Dos Tacos), this one focused on free-range fried chicken sandwiches rather than burgers or tacos. The Bird is set to open this fall at 115 New Montgomery St., and it will be open for both lunch and dinner.

Paganini has quietly been amassing restaurants in the Bay Area — he currently owns 17 (Super Duper, Lolinda, Belga, and Delarosa, just to name a few), with plans to open number 18 in Cow Hollow, number 19 in Hayes Valley, and now whopping number 20 in SoMa.
Fast casual fried chicken has been a popular Bay Area (and nationwide) trend for 2016, with The Organic Coup and Starbird here (and Fuku farther afield) focused solely on that offering, which is widely credited to Oakland's Bakesale Betty as the originator.
