As of Monday, August 8, Polk Street has another bar on its hands, this one called Buffalo Theory and focused on craft beer and bar bites. Chef Tim Luym (Poleng Lounge) and owner Ted Kim (Steins Beer Garden & Restaurant in Mountain View) are behind the project, each respectively bringing food and drink experience to the table.
Luym, a Chronicle Rising Star Chef in 2007 for his Poleng Lounge Filipino- and Asian street food-inspired menus, is bringing many of the same flavors to Buffalo Theory, with food designed to be shared and borrowing inspiration from the Philippines, Spain, Japan, and more. Eclectic, global dishes like arancini made with sticky rice, mushroom, shrimp, Chinese sausage, and XO aioli or sisig and grits make appearances on the menu, which you can see in full below. As for the drinks, Kim curated the offerings (also in full below), with 30 local and global beers on tap, plus wine and nitro-brew coffee on tap as well.
Buffalo Theory opens Monday, August 8, and hours will be Sunday through Wednesday from 4 p.m. to 11 p.m. and Thursday through Saturday from 4 p.m. to 12 p.m. No reservations.
