Souffle pancakes are all the rage in Japan right now, with dozens of restaurants, cafes, and rapidly growing chains specializing in the light, airy treats.
San Francisco will get a taste of the fluffy action via Gram Cafe & Pancakes, which has locations all over Japan as well as newer posts in Hong Kong and Thailand. It enters the United States for the first time with a shop at Stonestown Galleria, which lists it online as “coming soon.”
While some Bay Area restaurants like Sugarhill Kitchen and Bette’s Oceanview Diner have souffle pancakes on their menus, they’re not quite the same as the Japanese style. Gram makes these “soft-as-sponge premium pancakes” in tall stacks of three at three points in the day, and only serves 20 orders at each time. With just 60 possible chances to try these cakes, you can bet lines will form early once Gram opens. When the premium cakes are sold out, expect to find other pancakes, French toast, soups, and desserts.
