Top SF Bar Talent Behind PCH Is Expanding Downtown

Esteemed SF bartender Kevin Diedrich is proudly displaying a newly acquired liquor license today, announcing a forthcoming downtown bar at 32 3rd Street. According to that license, it’s another effort with partner Andrew Chun of Sidecar Hospitality (Press Club, Schroeder’s) and it’s to be called Night Market.

The new bar is “inspired by night markets around the world,” says Diedrich, referring to the evening food and shopping bazaars popular from China to the Philippines — where Diedrich was born, though he grew up in Virginia — and beyond.

Diedrich opened Pacific Cocktail Haven in 2016, teaming up with Chun and his Sidecar Hospitality team on the project. The bartender cut his teeth at spots like Burritt Room, Bourbon & Branch, and Jasper’s. But it’s at Pacific Cocktail Haven, better known as PCH, where he’s left an indelible mark. Staples of the PCH menu include drinks like a miso old fashioned (miso butter-washed Bacardi 8 rum, Pommeau, bitters) and a leeward Negroni (coconut-washed Campari, Pandan cordial, Sipsmith VJOP gin, and Mai Tai bitters).

The Night Market drinks menu will deviate from the one at Pacific Cocktail Haven, says Diedrich. “PCH is very much Pacific/Asia inspired. Night Market will highlight not only Asia, but South America, Europe, and other Night Markets.”

Diedrich hopes to have “NM” open by the end of the year. For now, it looks like he’s getting deep into demolition and renovations. Stay tuned for updates.
