With the deluge of articles about the restaurant industry tailspin and an increasing number of empty dining rooms around town, it's easy to jump to the conclusion that every single restaurant is in crisis mode. Yeah, not so. Sure, some might be making less per cover, but rest assured the books are still very much full at a handful of joints. And if you think the recession means that you're walking in at these places on a Friday night sans wait, you're mistaken, sorely.
