Poutine is the hottest thing to happen to fries in California since carne asada, and in honor of Burger Week Fryday, we hit the bricks to find 15 iterations available around town. From classic to Korean-influenced, fine-dining to food truck, truffles to teriyaki, these takes on poutine aren't always traditional, but they are what the dish demands: soul-satisfying, hangover-killing, stoner-pleasing combos of crisp fries of every thickness and gravy of every type (and usually, but not always, some cheese curds as well). Added bonus: many of these places also serve burgers, if you're looking to kill two cravings (and possibly yourself) with one stone.

Chris Beerman makes his own cheese curds for his take on poutine, with wild-mushroom gravy and crispy pork belly decorating the house-cut Kennebec fries. The final touch? A heap of feathery grated pecorino, same as the infamous mac-and-cheese.
